My new clubs have cause a few gaps in my distances with my wedges. Is it better to take my 52 to a 54 or take my 56 to a 54. I know one will cause me to lose some bounce. Thoughts?
Take the 52 to 54. Forget about the stamped bounce. Bounce is a marketing tool the manufactures "makes one think is necessary". My old GW is a 52. The one with my set is a 50.

I wouldn't say it's useless. Different soils can really create havoc if you don't have the correct bounce.
That's not a horrible set up IMO. the 6° between your gw and sw is a little much imo though. I can hit 90-95 yd 56° sand wedges all day as a pin seeker. I can hit 70-75 yard 60° lob wedges as a pin seeker. Asking me to hit an 80-85 yd shot or a 60 yard and I have no idea where the shot is going. I could wind up 3 ft from the pin, in a fried egg lie in the right side bunker, or I could hit it 30 yds and be facing another chip style shot. For me, the wedges aren't about being able to chip from just off the green (that's one of the best parts of my game actually), my wedges are being able to hit from 100 and in.
