I will be making soon cause I got a hankering for it, but my grandmas potato salad is outrageous, and is a meal on it's own. I add a well cooked fall apart ham as a side. She soft boiled the taters and then chills them overnight so they don't mush up while mixing. It has to be mostly chunky.
However much potato you want, peeled, cubed, boiled, and cooled.
Mayo
Only enough mustard to take the white off the mayo. no more.
Celery seed
salt/pepper
sweet relish (my mom sometimes also adds pimento)
chopped onion
chopped boiled eggs optional (sometimes I do, sometimes not)
fresh celery optional but mostly I don't
Add enough mayo to be properly coated knowing some is going to soak up, so I usually add a little more on day 2. Add a couple squirts mustard. Going for light off-white color, not flavor per se. Gotta hit the celery seed till that flavor comes out. And the rest of the stuff. Potato Salad is one of those things of preference and everyone's moms or grandmas is best. But, I'm not a heavy egg/mustard/mushy potato salad guy, so this recipe is heaven for me. my second favorite is from Martin's BBQ joint in Nashville. A little more mustard in his, maybe no celery seed, but other wise similar with a hint of sweet to it and it's really good.
