What did you have for dinner II?

Can of corn (drained)
Can of cream style corn
Box of jiffy
8 oz sour cream
Butter - it calls for a stick but I use way less.

Mix it all together and bake for about an hour in 8x8 dish
It does look good

My wife loves the Jiffy mix and a touch of honey with her corn casserole;).
 
Mixes are for working mothers. I'm always trying to make things from base ingredients. I'm "challenged" in that respect.

Did y'all have a service for the salmon before it was cremated? I kid, I kid, but not really:p... hoping that was just the soy/ sugar caramelizing lol! BTW try that salmon or halibut with Sous vide then a 30 second pan sear. I did sous vide salmon the first time last month and Ill never bake it again. Soooo moist and med rare sorry off topic.
We had Venison shepard's pie piped with Parmesan whipped potatoes.

Shephards Pie is one of my favs.

Yesterday....

Whole wheat sphagetti with, red onio, garlic, capers, basil, lemon zest topped with fresh baby spinach and a piece of smoked salmon.

Smoked salmon...Full filet of wild caught salmon 2-3 lbs. Dry brine of salt and pepper for about an hour. Basting of molasses and soy sauce marinade. Into the smoker for a hot smoke over maple chips. Best salmon for me. (sons creation). my wife is not a big fish eater. It all tastes fishy. lol. But, she absolutely destroys his smoked salmon. He's 17 and very talented on the smoker.

Friday, he is smoking us some steaks for Valentine's...Anyone here smoked steaks?? I have not attempted yet.
 
Biscuits made with other than flour milled from pure red winter wheat are like second base from outside the fiber-filled vest. You ain't touched that girl's boob. You've just disrespected her. Get your damned ass out the kitchen. Best you just get out the house! Nah, you go on down the street. Don't you be around here anymore. Girl, when you meet a man you want fondling your sweet bussom, you'll know whether he's worth it 'fore his hands ever touch you. Now, have a biscuit. A good biscuit is better than most men in this world. Yes, I am one of them. That's how I know.


Sounds like a lot of trouble. I just fix those awesome 7-Up biscuits and touch my wife's boobs when she ain't looking.
 
Chicken pot pie

At the risk of being improper, I have made CPP in the past and came out pretty good. But, CPP is probably the best thing on the KFC menu, and is actually very good for a $5 meal. So, I don't make at home anymore.

Love corn casserole. I used to make quite a bit and would serve with enchilada casserole. Most recently, my wife came across the Jiffy corn casserole recipe, and we've been using it. Love it. Now that I mention it, the enchilada casserole hasn't been done in a while. It will be coming up soon.

I like salmon, I like trout, I like char... There's not much fish that I do not like.

Fish is fantastic. I normally supply my own trout. Bring any and all fish. (Except Swai. And I'm off Tilapia now. It can be nasty from a USDA point of view). Otherwise, if it were just me in the house, fish would be a regular several times a week. A good fish chowder or curry is the bomb. I do believe blackened Red Fish is one of the best I've had.

Sword Fish, Mahi, Tuna, Grouper, Red Snapper, Red Fish, Blue Fish, Speckled Sea Trout (any trout really), Mackeral on the grill, Catfish, Salmon, Black Bass, Striper, White Bass, Crappy, and many delicious fish the sea offers that I've tried and can't remember. And throw in clams, oysters, mussels, scallops, crab.

I may try it one day while out. But I have 6 kids. It’s cheaper to make at home. Lol

That is an interesting combo. My first thought was really?? But then corn goes well with Mexican items and the sweetness of the corn could help with the heat (if made spicy) enchiladas. Mmmm!

The enchilada casserole and corn casserole pair up very well. Back in the single days, I would always fix the two together for plant employee xmas dinner. Needless to say...single, can cook, nice job....I had more than one proposal from single moms on the floor. Some more decent than others.

The enchilada casserole is quite easy and yummy.

Corn tortillas
Ground Beef
Can of cream of mushroom soup.
8 oz sour cream
Can of enchilada sauce
Can of green chiles.
Diced up onion.
Bag or two of mexican blend cheese.

Brown meat and mix together other ingredients. Add meat and mix. Grease bottom of baking dish. Line with tortillas. Spread layer of mix and top with cheese. Repeat for 2-3 layers till mix is used up. Bake at 350 for about 45-minutes.
