BTW try that salmon or halibut with Sous vide then a 30 second pan sear. I did sous vide salmon the first time last month and Ill never bake it again. Soooo moist and med rare sorry off topic.

I like salmon, I like trout, I like char... There's not much fish that I do not like.
Love corn casserole. I used to make quite a bit and would serve with enchilada casserole. Most recently, my wife came across the Jiffy corn casserole recipe, and we've been using it. Love it. Now that I mention it, the enchilada casserole hasn't been done in a while. It will be coming up soon.
That is an interesting combo. My first thought was really?? But then corn goes well with Mexican items and the sweetness of the corn could help with the heat (if made spicy) enchiladas. Mmmm!
