What did you have for dinner II?

I may try it one day while out. But I have 6 kids. It’s cheaper to make at home. Lol

True, you can probably make a family CPP at home for less than $30-$40. But, like you say when you're out, and no one knows you're sneaking one, KFC chicken pot pie is the best thing they offer.

Salmon patties, black beans, slaw.
Need to know before you get likes or unlikes; was this fresh salmon or the stuff that comes in a can that I use as bait in coon traps. It brings back Friday Lenten nightmares from my childhood, mom called them croquettes to fancy it up....asking for a friend.
Went on a whale watching trip in Alaska one time and the captain pointed out a salmon cannery on the shore and I wondered how I could buy enough dynamite and place around that place to save some poor children from a traumatic abusive childhood.

From a can. I'm not wasting fresh salmon making a patty, cake, or croquette out of it.

I loved my mom's salmon croquettes. She used salmon in a can.

I hadn't had a salmon patty is several years until new years eve at my parents church in Ky. They had a dinner, and someone made them.

God food. One of the simple dishes I learned on my road of learning how to cook for myself. mom took Sunday nights off after church. you had to sink or swim, or live off cornflakes on that night. I scrambled eggs from a footstool at the stove. Graduated to frozen burgers (fresh. she would buy bulk and make up the patties and layer them on a cookie sheet with wax paper and keep in freezer). Salmon patties was a staple dinner in college when me and my brother roomed together.

My favorite though...Breakfast joint in hometown would make those big cathead biscuits and have all kinds of meats. One was the big round salmon croquettes. They'd squash it flat on the biscuit and drizzle honey on it. Darn good biscuit.

And you always have to add chopped onion. Mine were simple. Haven't made in quite a while. Canned salmon, a little bread crumb, egg, onion, a little salt and pepper. and a lemon to squeeze on top.

We have a good grill at the bowling alley. Always a weekly special. Last night I worked, so had a grilled ham and cheese and a bowl of homemade chili.

Tonight will be Cinco Amigos for my nieces birthday. I'd rather it be at Romo's, but not my call. Romo's (local mex joint) has fantastic tamales and chile rellanos. Love both. Proper chile rellano. Just a lightly dipped pablano stuffed with cheese. Not the cheese and beef over a bell pepper.

Same ingredients for hers. Mom grated her onion. She did that in potato salad too. She wanted the onion flavor but didn't want to bite into a piece. Genius.

I will be making soon cause I got a hankering for it, but my grandmas potato salad is outrageous, and is a meal on it's own. I add a well cooked fall apart ham as a side. She soft boiled the taters and then chills them overnight so they don't mush up while mixing. It has to be mostly chunky.

However much potato you want, peeled, cubed, boiled, and cooled.
Mayo
Only enough mustard to take the white off the mayo. no more.
Celery seed
salt/pepper
sweet relish (my mom sometimes also adds pimento)
chopped onion
chopped boiled eggs optional (sometimes I do, sometimes not)
fresh celery optional but mostly I don't

Add enough mayo to be properly coated knowing some is going to soak up, so I usually add a little more on day 2. Add a couple squirts mustard. Going for light off-white color, not flavor per se. Gotta hit the celery seed till that flavor comes out. And the rest of the stuff. Potato Salad is one of those things of preference and everyone's moms or grandmas is best. But, I'm not a heavy egg/mustard/mushy potato salad guy, so this recipe is heaven for me. my second favorite is from Martin's BBQ joint in Nashville. A little more mustard in his, maybe no celery seed, but other wise similar with a hint of sweet to it and it's really good.
