Back in 2001 I won a "Best Seafood Dish" in the "Best of the Beach" contest on Ft. Myers Beach. There were only 13 other restaurants involved so not a big deal. But my dish was Salmon Cakes. After the award, people started coming in and asking for a Salmon cake as a sandwich.
Long story short. If you ever get bored with the way you make them, here are some suggestions.
Sriracha and mayo ailoi for a condiment.
Blackened with a garlic and caper ailoi as a condiment.
Same way as you do now but add some alfalfa or bean sprouts and some sliced Avocado. Obviously tomato and Onion also.
Roasted red pepper sauce for a condiment.
Cheat sheet. Mix some diced cucumbers and fresh dill with Ranch dressing for a condiment.
Just ideas to give you choices. Nothing more.
