Behr, what's the best fish for baking (we're trying to eat healthier). I need to stock my freezer and pantry with stuff. Obviously fresh is better, but frozen works better with my lifestyle at the moment. And I'm asking for something besides salmon and mahi mahi (two of my favorites).

What about halibut? I don't think I've ever bought that. I've used flounder, and it's ok, but it seems a little delicate. I like it best coated with flour and pan fried (it seems to stand up a lot better that way?), and I want to get away from that.


Not sure what you mean by "heathier". Frying in olive oil is a little more fattening than baking, but brings several health benefits (aids in lowering bad cholesterol for one) and is sooo much tastier. Add fresh garlic, basil, rosemary, dill, cilantro, tomatoes, corn, asparagus, onion, peppers, beans, mushrooms.......you get the point. As far as the best for baking? Flounder is great for baking. I like to bake Snapper, Sea Bass, Golden Tile, Arctic Char is hard to find but unbelievably good, Catfish with Jerk seasoning is good, Redfish works pretty good.

I agree, but as you said, lifestyle requires me to freeze things too. Key is to buy as fresh as you can and freeze immediately, don't leave in the fridge until it "needs to be cooked or frozen.

I could go on but I don't want it to turn in to TLTR. :)
 
Behr, You ever go to Hammond stadium and watch the Miracles play baseball? We were talking today about the best Hog Dogs and I remember theirs being great. I can't decided if my memories are influenced by the atmosphere and being with my Grand Dad or if they were really that good. What do you think?

I think a hot dog at a ballgame is better than Prime Rib at the Ritz.

Cornmeal and flour when I fry fish. Not healthy. :)

Then stop using them. And I don't think it's the cornmeal or flour, but the milk/cream that you use to dredge them with is the issue. I understand it's not the same, but what is your main objective.

AND, it's tastier than baking. :)

Last night had bone in Ribeye rare, snow crab legs steamed 2 pound, Red. yellow. green peppers and potaotoes all grilled in olive oil except crab. Tonight eating a late dinner chicken schnitzel with garlic mashed potatoes. Drinking beerz.. just to bump your thread.

Behr, best way to mix shredded cheese into a recipe and melt without it clumping? Should I maybe melt it in a double boiler before adding it to the recipe? Just heat it up longer?

Mushroom....Gravy.....Steak.

Easy and inexpensive?

Button mushrooms sauteed in butter, soy sauce and Worcestershire. (Salt, pepper and fresh garlic...a little rosemary for a "poor mans" Diane.

Pull the mushrooms when tender and add a little flour to make gravy.

*If available, add a little red wine to the mushrooms while they are simmering.
 
Oh....Steak.

To cover it with gravy? Cubed Steak, after breading it and "chicken" frying it.

JMO.
