Eggs can definitely be a challenge if you don't have a nice pan to work with. I have a non-stick frying pan that I reserve almost exclusively for eggs and omelets. It wasn't an expensive one, so I make sure to only use silicone or wood spatulas with it so as not to wear out the non-stick coating. I also put a generous dob of butter to melt in the pan before the egg goes in. That way, I can fry eggs at a low heat when I want a sunny-side-up or over-easy fried egg and they don't stick.

As far as omelets, I think you should let the egg set up and then flip it before you start adding the cheese, etc. Once I flip it, I add the ingredients almost like toppings on a pizza, and once they heated for a minute, I just slide the omelet off on a plate, folding it in half as I slide it onto the plate. That method works for me.
 
I just got calphalon tri ply stainless steel pans. I got rid of all aluminum cooking pans for Reds health issues. Also studies are showing the non stick cookware is bad as well.
I'm sure there is a way to cook eggs in stainless cookware without stickage. I just haven't figured it out yet.

dude I cook with Calphalon pans and never have a sticking problem. But I always spray pam on them before I cook.

Folgers says coffee is good for you. I believe them.

Seriously though Red has multi autoimmune issues. If there is a small chance the pan can cause problems I'm not using it. I've never used pam or other sprays. I may try that next.

Your marshmallow advice has been sound in the past but I will need more information than just butter. Butter at Med heat equals stickage. Could be because the pan is new.

Maybe you're not using enough butter? I plop the butter in on the pan while it's cold, then as it heats up and the butter melts, I roll it around in the pan making sure it touches every single centimeter of the surface area and even as high up the sides as I dare to go w/out spilling it. I like to practice the no spatula omelette flip so I have to make sure it's not sticking anywhere. My wife shudders every time I do a flip, because sometimes it results in a mess all over the stove, which she feels obligated to clean up.

I'm sure Behr never struggles with the pan flip, but I've found that one of the most important things is to flip with confidence. If you do it half hearted, you end up catching only half of the food back into the pan. :lol:

I worked for applbees as a cook to get threw college. Made thousands of omelets on brunch shift. I'm really good at the flip with a nonstick pan. This new pan be given me hell.

Well we have a problem. No eggs will be cooked till tomorrow morning.
tonight was grilled chicken, roasted Rosemary red pots and steamed veggies.
