On my omelets I have a coated pan that I normally use, but have made them in stainless. I coat with pam, then plop the butter. I cook it without touching it on a low -Med heat, then start giving it a good shimmy to make sure there's no sticking. I keep an eye on it until its firm all the way through, still keeping it moving (so the eggs don't brown or stick) then add my filling and fold it the way jp said![]()
