Porta Coeli* chicken and rice.
*Old family recipe from my
Step-Grandmother's cook book. The recipe is named after the oldest church building in this hemisphere. Start with a cut up chicken, season liberally with salt, pepper, garlic powder. Brown in olive oil, drop in a couple bay leaves and pour in about a cup of whatever white wine you like, cover and simmer until tender, re-season to taste, serve over rice. Might just be childhood memories, but I love this dish. Well, maybe not. My wife loves it more than I do and she never had it until after we were married.
