What did you have for dinner II?

I have to buy the rib roast, asking them to preserve the cap whole for me. The eye flesh makes for fine medium rare steaks, so I enjoy the cap and the eye in due time. Butcher always likes my order.

OK. So that delicious outer band on a ribeye that melts in your mouth is what you have cut off the roast whole. Got it. That little strip is the only reason I buy ribeyes or prime rib for the grill or dining in.

Note: I have purchased a rib roast and cut it up myself (I save & cook the ribs separately), but, these days, the butchers I patronize will do the cutting for me the way I like it at no extra charge.

Do you make the empanadas or buy them? Deep-fried or baked?

I buy them and the Cuban Sandwich at La Semilla, a Colombian restaurant in Tampa.

Empanadas are a real challenge to make so I prefer to buy them from someone who knows what they are doing. These are fried.
Have you ever tried making them?

I have, and I think they would have been pretty good (flavor, etc.) but I didn’t want to go the deep-fry route, so I baked them. Not a happy result. 🤪
