I have to buy the rib roast, asking them to preserve the cap whole for me. The eye flesh makes for fine medium rare steaks, so I enjoy the cap and the eye in due time. Butcher always likes my order.
Here’s one linkOK. So that delicious outer band on a ribeye that melts in your mouth is what you have cut off the roast whole. Got it. That little strip is the only reason I buy ribeyes or prime rib for the grill or dining in.

Empanadas are a real challenge to make so I prefer to buy them from someone who knows what they are doing. These are fried.
