What did you have for dinner II?

OK. A little lax on the smoker and grill lately, but...

Last night...Sausage dogs with chili (and for me..topped with my freshly canned summer squash relish.)

Saturday, finely grilled ribeye's and baked potatoes.

Also, for the oncoming flu and cold season, been partaking of my homemade elderberry syrup. They are readily available around our fields, and I'm not spending $15 for two shots of Sambucal. Got one more picking to harvest and cook down, then on to the dried elderberries I bought off amazon. I make it a tad on the thin side ( like juice) so I can also just sneak shots because I just like elderberry in any form of juice, jam, or syrup.

A day late, but Tyler Florence's mashed potato recipe is by far the best we have ever fixed.

My wife has her own way of making mashed potatoes. She'll politely consider any other recipe or method, then make them her way. Butter and cream, half'n'half, or evaporated milk is involved.

Very similar already. Tyler's calls for those golden type potatoes (yukon?) 4 lbs. Not just the white with gold skin. Peeled cubed and boiled with bay leaf and salt. Heavy cream 2 cups. Butter (We use Kerrigold) about 3-4 TBs. (Salt. Pepper. Chive. To Taste). My wife likes to kick the butter up just a tad.

I planted some spaghetti squash this year. It went crazy, just like my yellow and zuchinni. Cross cut one, cleaned out the seeds and roasted for about 30 minutes to loosen it up. Flaked it apart and had squash "pasta" tossed with red onion, orange and red sweet peeper, garlic, olive oil, and white balsamic. With sliced smoked sausage. Yum Yum.

Nice.........

Another home grown meal tonight... Fried up some Brown sugar hickory smoked bacon I cured from our pig we got from our friend, baby romaine hearts and Cherokee Purple tomatoes from the garden all sliced and layered on some sourdough bread my wife made yesterday. The little people call them BLT sammiches, we call them the royal eats :p. Had a side of the last of our cantaloupes.
Wait until you see what I got in mind for tomorrow if we get all the cows and calves taken care of by early afternoon. Got a full day of tagging and checking our herd and might be too tired for making dinner but we'll see.

But a well fed bum.
I apologize sir I shouldn't have used bum... and we now call that meal Disenfranchised transient railway no charge guests open air dinner...
One of the first meals I learned to cook camping on hunting trips and still one I'll fire up some charcoal in the yard pit and throw some on for old times sake.

My wife picked up a pizza from the only place we get pizza. For the first time they screwed it up. Had to pick rubbery fungus of my half that had 0 pepperoni on it. Ate it anyway cuz drankin on an empty stomach is not prescribed by my doctors.

Lol, hobo isn't exactly pc either. I work at the career center and really shouldn't call it that. But, "dislocated individual dinner" doesn't have the same ring to it.

As a Kid, we used to make Hobo stew in a new old-time metal garbage can every labor day at the lake before heading back to school. Thought it was so cool that we were eating out of a garbage can. Sad thing is we knew after that weekend, we were heading back to school.
