Tried reverse sear for the first time on a ribeye tonight. Seasoned generously with kosher salt and crushed black pepper and let it sit in the fridge for about 6 hours. Let it get up to room temp then put in oven at 225°F and pulled out at 120 degrees internal. 1 minute on each side in cast iron, then put some butter, fresh rosemary and thyme in the pan and basted and rendered the fat on the sides. Rested for 5 minutes. Best doggone steak I've ever tasted and perfect medium rare. There's no going back now I think.
I want to believe you. Make me one and I will see if you are lying or not...
 
How do you feel about 3 day water fasts?

*I work with a guy 20 years younger than me that fasts once or twice a year. I'm interested in fasting (at least trying to) but I'm 50 and on BP medicine.
A few days only maybe okay. There are now scales that can give you body fat percentage and lean muscle mass. It’s helpful for trends. Especially if you see your muscle mass decreasing faster than body fat percentage.

I've been waiting for a good occasion to do a nice steak that way. I've heard nothing but good things about it. I'll use a smoker for a little smoky flavor I think.

I'll skip the rosemary and thyme though, you should be ashamed, putting hippy herbs on a steak.
 
Are you saying that there is a link between statins and dementia? I had not heard of that. I would be interested in any information you have on that. I will look into it myself in the meantime. Thanks @JacketVol

Really depends on how much you fast and how few calories you’re getting each day. Need to figure out your basal metabolic rate and that will give you the calories you need for a sedentary day.
Exercise can mitigate some of the muscle loss of extreme dieting. But still have to be careful.
How do I figure out my Basil metabolic rate?

They are actually recorded in use by Ancient Greece if you didn’t know!

Rosemary in particular was even said to improve memory and recall. Maybe if you used them more often you’d remember that 😉
 
Like eating a Christmas tree, that's what I remember very clearly about rosemary.
I think the way to go with rosemary is to put a stem and accrushed garlic clove or two in a nice piece of melted butter (or olive oil) (or both) to flavor the fat. Then dispense with the stem or use it as ornament on the plate. It’s too strong to eat straight up.IMG_3922.jpeg
