I want to believe you. Make me one and I will see if you are lying or not...Tried reverse sear for the first time on a ribeye tonight. Seasoned generously with kosher salt and crushed black pepper and let it sit in the fridge for about 6 hours. Let it get up to room temp then put in oven at 225°F and pulled out at 120 degrees internal. 1 minute on each side in cast iron, then put some butter, fresh rosemary and thyme in the pan and basted and rendered the fat on the sides. Rested for 5 minutes. Best doggone steak I've ever tasted and perfect medium rare. There's no going back now I think.
