Depends on the cut and if its been marinated. Flavor and tenderness aren't uniform with every cut.

If it bleeds but tastes done I can eat it. If its well done, has good flavor, and is chewable I'll enjoy it too.

I'll typically eat any steak a host has prepared but if my guests have to masticate their steak excessively I feel ashamed.

One thing I don't like is having to use steak sauces after it's cooked. Why bother?

However, a good marinade can make a big difference. It's like foreplay - sure sex is good without it, but with it the experience becomes memorable. JMO.

Only sauce I use is the blood and juice mix left over after cutting it. Then I take whatever else is left on my plate and mix it in a pile to make a quasicasserole to clean the plate.

Rare to med rare. I don't order rare often now that the kids eat off mu plate sometimes. Ill order med rare and give them the pieces that are a little more done.
