Every restaurant has a different definition. I ordered a steak at Outback medium and it came back medium-well. Meanwhile, I ordered a steak at Longhorn medium and that's exactly how they cooked it. Of all the steakhouse chains, Longhorn is by far my favorite.

Our local one has had some roach issues so I quit going.

Texas land and cattle does a good steak but their cracked pepper style steak is overkill and not worth it.

I had a filet at a Texas Land and Cattle restaurant in Houston. It was very very good. I wish that chain would expand to Tennessee. Another Texas chain that is popular is Saltgrass.

But its still cold and raw in the middle right?

I believe medium rare would have a cool center not a cold center. We're still talking 100+ degrees here. Also I would only do this with good beef. My pink slime I like broiled, boiled and grilled.

Steak snob IMO and I'm one too. My FIL could snuff both our lives and he eats his steaks medium well. He's not however "cultured" but he's a man fo sho.
