I've worked restaurant the 1st 15yrs of my working life done every job in the building from dish washer to GM.
It taught me that most people truly suck.
Use the port and add a little grape jelly instead of sugar, the bitterness of the mushrooms will help extract some of the sweetness but still allow it to be somewhat sweet. Again, it won't be Marsala, but should be good.
