Just put a chicken in the oven to roast. S&P, olive oil and fresh lemon juice on the outside, lemon zest and lemons, garlic, s&p, and rosemary out of my herb garden on the inside. Hope it turns out good. Sauteed kale and something else to go with it.
 
That sounds excellent. I love the smell of fresh rosemary cooking in the oven. Obviously you got your herbs planted. It's great having those things you use often.

Funny, I can almost smell the lemon garlic and rosemary from here. Lol...

Behr, my cousin came over today and we got to talking, think about tea cakes, and I got Mama's handwritten cookbook out to check something. There was a piece of paper on the back side of one of the pages, folded in half to where you couldn't see what it was. I don't remember ever noticing it before. I opened just to look, and voila! Funny thing is previously we had remembered chow chow as no cabbage. I have copied it exactly as written. The Sibby is Mama's older cousin. This recipe has to be over 100 years old.

Chow-Chow: Sibby Hargis Cole

1 gallon chopped cabbage
12 onions
12 green peppers
12 red peppers
2 quarts chopped green tomatoes
5 cups sugar
4 tablespoons ground mustard
1 tablespoon turmeric
1 tablespoon ground ginger
4 tablespoons mustard seed
3 tablespoons celery seed
2 tablespoons mixed whole spices
2-3 quarts vinegar
Hot pepper may be added if desired

Chop onions and peppers. Mix all vegetables with 1/2 cup salt. Let stand overnight. Drain. Tie mixed spices in a bag. Add sugar and spices to vinegar. Simmer 20 minutes. Add all other ingredients and simmer until hot and well seasoned. Remove spice bag. Pack hot chow-chow into hot jars; seal at once.

Had a friend whose mom made tea cakes. Man I loved those things.

Ohhhhhh! Tea cakes, they were so good. Ever tried an alfajor? It's sort of like 2 tea cakes with caramel layered between them. Every time we go to Miami, I load up on them!
 
After converting that recipe to what I made, the ingredients, measurements and cooking process is almost identical.

I make questions like that hard for me to answer, it's my issue. Haha.

To me it's like an "instant" mix. I guess if you wanted to make a cream based sauce or soup, it's convenient.

And I was asking Arky if that was okay, I still call him Ill.

Volly, how did your seared tuna turn out the other night? I saw the picture in the pub. Was it better than the time before? Was it the way you wanted it?

And, did you cook the chicken last night with convection? The way the skin appeared, I would say definitely yes. In fact, I would bet money on it.

Edit. The only reason I ask, it seems to have too much juice in the pan for it to be cooked with convection, but the skin is spot on.

Yea, it made me feel pretty good. Would feel better if someone would make some using the recipe I posted and tell me what they think. If they like it, but especially if it was the way they remembered.

I'm a gonna try it when me veggies mature. Got to. The store bought stuff is aight, however, I'm ready to get back to homemade.
