Turkey Tetrazzini - Recipe | Cooks.com

I used WAY more than a dash of nutmeg and cayenne (keep adding as you go and taste, you know how sauce concentrates flavors) and real mushrooms. Maybe 12 oz or so of cremini mushrooms. I air-fryed a turkey thigh to stretch the leftover Christmas turkey, so it was mostly dark meat, which I think has more flavor anyway.

So, has anyone made turkey tetrazzini with other than thin spaghetti noodles? Tagliatelle? Bucatini? Orecchiette? Gemelli?

I thought about doing that (especially when I couldn't find the angel hair at first), but to me, the chunkier forms of pasta would change the balance of the dish. I like how the thin pasta becomes sort of anonymous, just holding all the rest together. Just me though.

-- actually now that I think about it, I could definitely see making it with large shells. Medium? whichever size is a little bit bigger than my thumb joint. Neither tiny nor something meant to stuff a filling in.

That reminds me, there is an Orecchiette dish I like that is good for cooler weather. Since it will be near freezing here Sunday maybe I will make that.
