I've never seen any creme burlees, the one's I'm familiar with are rough and scratchy.How did you make your Hollandaise?

It would be easier for you to put each yolk in an ice tray with a pinch of salt (small pinch), freeze them then put them in a zip lock. Obviously, easier for a recipe.
