I absolutely can tear up a pizza but wife and I are working to get rid of this covid weight so I still need my fix so came up with this little way for something that vaguely resembles a pizza.

Air Fryer Low Carb Tortilla Pizza

1. La Banderita Whole Wheat Wraps/Tortillas (50 cals) from Walmart

2. Twelve Hormel Turkey Pepperonis

3. Contadina pizza sauce (squeeze bottle) - two tablespoons

4. A sprinkling of bacon bits for more flavor

5. Mozzarella cheese 1/2 cup

I put it in the air fryer for 4-5 min. Tortilla gets pretty crispy.

Pot roast, red potatoes and carrots, tomatoes and okra fresh from the garden. Try sautéing whole okra pods over medium heat with a little butter and olive oil. Cover while cooking. Salt & pepper to taste. Grew up with only batter fried but I now prefer it on a cookie sheet in the oven and sautéed the best.AC87F833-6D84-454E-B0EF-5A5B53A51853.jpeg
 
Fajita-style tacos with the other half of last night’s tri-tip and seriously fake (but good!) Mexican street corn: last night’s corn on the cob seared in a griddle pan (instead of fresh grilled), half mayo/ half sour cream (instead of crema), chipotle powder, and grated Parmesan instead of Cojita. Saved me a trip to the store for the crema and Cotija!
