What did you have for dinner II?

Well neither and both lol... a customer of mine has a pheasant shoot that I attend. They are farm raised birds but they have very few people who take the birds. I wind up taking home and cleaning 40 or more pheasant every year. There are usually some bonus quail too. Its kind of a shame that most of these guys come just for the food and the "shooting" but don't take any birds but I make sure they don't go to waste.
Almost every other wild game thing you see me have for dinner, I have hunted in the wild and killed myself. Wild game and fish is probably 80%+ of our diet. If you are interested in getting some pheasant I can probably give you some pointers. There are plenty of farm raised birds that are intended for shooting preserves that you can purchase straight from the farmers. FYI, duck you purchase is to wild duck what farm raised beef is to deer meat, completely different "animal" pun intended.

That's very true about the duck. Duck is probably the biggest reason I started to shy away from game. When I wouldn't eat them anymore I gave them away, when that got difficult I quit hunting. I would be interested in trying the pheasant, the quail I have no problem with at all. Our local quail population has gone the way of the fence row... vanished.

I have toyed with the idea of starting a wild game/ fishing thread for a while maybe ill do that now. BUt in the meanwhile Im gonna derail @joevol33 's thread here. Wild duck, goose, and swan are all things that I feed folks that dont "like" wild game not to even mention venison, rabbit and squirrel. Would be interested in hearing what kind of ducks turned you off. Most likely divers like scaup or did you have issues with any wild duck?

Wife made her version of twice baked potatoes - instead of scooping them out, she slices them and tops the slices with minced onions & peppers, crumbled bacon, and cheddar cheese. Served this with green beans and corn on the cob.

Proper prep/presentation could be as much of the issue as anything. Do you brine? To what extent?

I brine the pheasant and waterfowl most of the time with salt and a touch of sugar but only for flavor usually about 2-3 days. Brining is not required for anything IMO other than some moisture retention. Wild game of any sort but most especially "strong gamey meats" like venison, Black bear, Canada goose or diver ducks requires proper bleeding, cleaning, and aging for flavorful delicious meat. Cooking is one of two ways hot and fast ( med rare but NOT for bear) or low slow like BBQ deer shoulder. I think I am gonna start that thread next week and Ill send an invite lol. Got my mom and dad here at the house so have limited typing time.
