What did you have for dinner II?

Didn't know it was prepared any other way. :)

"baby" escarole massaged with EVOO chopped and mixed with carrot curls, sweet onion, sweet red pepper, little yellow pear tomatoes, and slices of boiled egg - sprinkle with a little of that Cavender's Greek seasoning. Try it as a side salad and tell me what you think.
 
You shouldn't have to poach chicken in Georgia. They're everywhere, and legal. ��

Joe, I know this is totally OT, but how are your wife and girls and did you get everything on the wreck worked out? Still praying for all of you all🙏🙏🙏.

Thanks, they're fine. Insurance said they've got it as far as proving fault from the other woman, it'll just be a few weeks before the litigation is over. We're supposed to get the van back next Thursday.

Golden Corral. I wanted to do something different, but my daughter got to choose since she's competing tomorrow.

NY Strip, potatoes & carrots over the campfire. We also had pulled pork and BBQ chicken one night and bacon wrapped chicken cooked in the cast iron over the fire another night.

We received our 1st Blue Apron order yesterday and made shrimp rolls with sweet potato fries and homemade pickles. I thought it was pretty good.
 
Roast w/ potatoes, parsnips, carrots, onions; Nebraska corn casserole; tossed salad (spring mix w/ adders on side: carrots, red bell peppers, some kind of semi hot marinated pepper, feta, walnuts, pine nuts, dried cranberries, fresh strawberries...everyone put on what they want😀); yeast rolls (should have been cornbread, but guests were from Nebraska and they eat rolls with their roast:eek:hmy:); chocolate pie.

I should have sliced a Grainger County tomato, but got lazy.

Tonight is leftovers!
