What did you have for dinner II?

Tuscan style sauce starting with a sofrito of celery, onions & carrots, then blending in the tomatoes and reducing?
We roast tomatoes as they come ripe over the summer then puree and freeze them. Brown sausage, drain, degpaze the pan with a splash of white wine, and saute onion, garlic, add the tomato purred and spice to taste. We some times add carrots or some other veggies we need to use up, but we aren't that fancy tonight

The roasted tomato puree is great for tomato soup too.
