Told my 18 year old yesterday he was cooking dinner and I would assist. After throwing some ideas out, he said how about Chicken Curry (He loves Indian food). He looked up a recipe and we went to the store. I had everything except Garam Masala. So I helped prep the stuff and he cooked it. Can't tell in the pic, but it had a beautiful yellow/orange color. I had him taste the broth to see if the cilantro was right. He just grinned and said it was better than the indian restaurant. I waited till it was done. Holy cow, he was right. It was a good and simple recipe and he nailed it. Served over Basmati with naan.
Creole seasoned spatchcocked roast chicken (ate the leg quarters), green beans with marjoram, sliced potatoes poached in beef stock, a few espresso beans covered in dark chocolate for desert.
If you have a ridiculous amount of eggs on hand, frittatas are a great way of using up a zillion random bits of veggies before they go bad. Plus quick and pretty idiot-proof.
