Would love to see a recipe for that if you find it. Looks fantastic! I do a pork loin with Apples, a few dried cherries and Gruyere slathered with whole grain brown and dijon mustard that the wife loves, never really thought about Spinach...I did not take a picture of it finished tonight, forgot to. But last night we made this pork stuffed with mozzarella, spinach, sundried tomatoes, etc. The outside has a glaze of lemon, dijon mustard, garlic, some other stuff I can't remember.
It took a lot longer to cook than on the directions for us. Not sure if we did something wrong or had a lot more meat. So we gave up and had leftovers last night while it continued to cook. Tried it tonight and loved it!
