What did you have for dinner II?

I did not take a picture of it finished tonight, forgot to. But last night we made this pork stuffed with mozzarella, spinach, sundried tomatoes, etc. The outside has a glaze of lemon, dijon mustard, garlic, some other stuff I can't remember.

It took a lot longer to cook than on the directions for us. Not sure if we did something wrong or had a lot more meat. So we gave up and had leftovers last night while it continued to cook. Tried it tonight and loved it!

Would love to see a recipe for that if you find it. Looks fantastic! I do a pork loin with Apples, a few dried cherries and Gruyere slathered with whole grain brown and dijon mustard that the wife loves, never really thought about Spinach...

A few modifications, but this is one we used.

Had Sushi with my Wife, son, daughter in law, and granddaughter and three big dogs. Did you know that Pitt bulls,chocolate labs, and Shepards all will Eat ginger salad and shrimp, mango, avocado, tamago rolls? The granddaughter And papa thought it was funny, mom and gigi however did not. Her daddy took the Switzerland position.
