What did you have for dinner II?

Here where I live there's a taco place started by a bunch of serial American restauranteurs and it's terrible. But it still wins 'best tacos in town' every freaking year because of the combo of uncultured hipster kids that think cool decorations make a restaurant and ignorant yokels (that can be converted, mind you) that just don't know any better.

With a Spanish-speaking wife we know where to go to find the real good stuff :)
Best tacos I've ever had come from a local place in Ky called taco casa. Weirdest part is that it's owned by an Indian.

I really am impressed by the seriously fancy cookin’ by a lot of guys on here. We used to think that we had peaked when we grilled a pork chop wrapped in bacon. 🤪 I never used to make anything more exotic than chicken cacciatore. <- which isn’t that exotic, now that there’s spell-check

I was forced to cook at a young age. Mom took Sunday evenings off after church. Once Corn Flakes and Rice Krispies got old, had to move on. (We didn't get Froot Loops or anything like that). Moved on to scrambled egg sandwiches, then burgers. She kept a cookie sheet of frozen patties in freezer. I was on a foot stool to see and reach the stove. (Same principle applied to cleaning up kitchen, folding clothes, putting up summer garden, ironing, etc. I can starch shirts to make a dry cleaners proud). Shared apartment and cooking duties with brother in college, then other roommates. Picked up basic meals and stuff, then more experimenting. One roomie from New Mexico, so even mac n cheese and homemade salsa were kicked up. Single 9 years between marriages, so I could just cook and not get graded. I used to be better without recipes. Never have dabbled in the really fancy sauces and reductions much though. I do want to figure out the port fig reduction from Carrabas for pork. I'm good on grill and in kitchen. Smoking meats is only little more than a year in the bucket for me, so still improving. I'm not like a food tv level cook. But, I can do well. First wife refused to cook. Literally. Just because I could cook better than her. She didn't see the point. She was split personality type. I got rid of both of them Two birds with one divorce. But, I digress.

I think where women have the advantage is when hubby comes home from work, and wifey is cooking away in nothing but an apron, we don't really pay attention to the food, and it is all cooked very well. If that generally does not happen, there are more complaints about the cooking.

Ok, I suppose that somewhere from the realm of fiction there are wives who are “cooking away in nothing but an apron,” but I do a lot of sautéing and stir-frying, so there needs to be a leetle bit more on than an apron. 😉
 
Zucchini and yellow squash stuffed with sausage, onion, garlic, mushrooms, chopped zucchini/squash guts, yellow bell pepper, Panko crumbs, red pepper flakes, Italian seasoning, shredded Italian cheese. I’m finally getting the mix and cooking time settled.
 
I fix this seasonally, so with tomato and gardening season coming on here's one for ya to save for fresh picks.

Zuchinni split in half long way. Spread a little olive oil, salt pepper. Top with with sliced tomato and parm. Grill.
