Lol fluffy this evening. We make them both ways though. The wife grew up on the fluffy ones and makes them that way. I grew up on the flat ones and make them that way.

I still don’t know my grandmother’s recipe, but they were flat and kind of sweet. I suspect that in fact they were simple pie dough.

But she made the simplest, best, most satisfying, just the right amount of pepper, doubtless in the top10 list of finger-wagging-naughty-things-that-will-kill-you, and all around exactly-how-they-ought-to-be chicken and dumplings that ever graced a Sunday afternoon dining table. RIP, Mama Bea, 1897-1984.
