Apologies. One of you talked about having a smoked gouda grilled cheese. That inspired me to go the mac & cheese route

I was trying to figure out a way to use up the homemade sauce as it makes a ton. It was amazing. Brie goes with it so well.

2 hours exactly on 350° convection, 19# dr-brined, internal thigh temperature in high 150’s. Should be coming out in 15 minutes. (The blackened stuff is just thyme sprigs etc.)

OMG, I love convection cooking.
