6-8 squash- cut in 1/4 in slices
2 eggs- beaten
4 oz (or more!) velveeta- cubed
1/8 cup heavy cream
2 sleeves Ritz crackers- crushed
Salt- to desired taste
Pepper- to desired taste
1 1/2 sticks butter- melted
-Preheat oven to 350. Boil squash untiltender; drain well. In an 11x13 dish, combine 1/2 stick melted butter, squash, cream, cheese, eggs, salt and pepper. Mix well. Bake for 10-12 minutes. Take out and put crushed crackers to cover. Pour remaining stick of melted butter over the crackers and continue to bake an additional 10-15 minutes.
