What you should be looking at is the AVERAGE per player not the total points, at this point. The SEC says you can only sign 25 and the rankings only consider the top 25. UT has more commits so they have a higher number total but several SEC schools have a higher average per player. That means unless those schools start taking 2-3 star guys they are going to pass UT when they fill their class. CBJ has done a good job of recruiting but don't expect UT to be in the top 5, might get in the top 10.
Avg star rating is flawed for the simple fact that it doesn't take into effect the different levels of stars. There is a difference in a 5.6 3* and a 5.8 3*.
Also, if Bama signs 20 players and has a total of 74 stars, their avg star rating is 3.70. If TN signs 25 and has a total of 89 stars, that's a 3.56 avg star rating. This scenario is using 14 4* and 6 3* for Bama. I used 14 4* and 11 3* for TN. Bama gets a higher star rating for the class even though both classes signed the same amount of 4*. TNs top 20 would be equal to Bama's in this scenario, yet on paper we show a lower avg due to numbers.
