The missing ingredient is that NY street gutter tap water.

Yup. There’s even a spot that just opened in Nashville that used custom filters that match water used for making dough with the mineral content of NYC tap water.. and even that didn’t do the tricker for her. She said it was closer than the other places but still not quite right.

Probably has to actually be in NY for it to taste the same. . . The sights, sounds, and smells & general atmosphere play a big part in the experience and memory of it. Imo.

Wife is from 45 min outside NYC and her #1 complaint is she can’t find a proper NY bagel in Nashville. I’ll have to check that out as well!
Un-possible she will never concede the point. It would be like a guy from Tennessee putting a bbq joint in NYC on a par. Even if it was flown in from Tennessee and put in a local box, cannot be as good by definition.
