Build a fire, wrap the corn (still in it's husk) with aluminum foil and throw them in the fire.

Okay, I have the pig settled. Dry rub with hickory smoke. Now for the sides......

I have a baked bean recipe I can make and stuff in a crock pot to stay hot. Bacon, cider vinegar, brown sugar, butter beans, kidney beans...... old family recipe. Works for me.

At Costco today found some fresh cheese tortellini. It was a sample. Tasted good plain so I figured a few tasty ingredients & it would turn into a yummy salad. Some halved cherry tomatoes. Sliced spinach. Light olive oil/garlic dressing.... ?

I know "tater salad" is probably required but, I'm afraid of the mayo and having it sit outside.

WISH I had the ability to cook pots of corn on the cob, but not sure how I can accomplish that without a separate outdoor burner. Any suggestions? Local corn is just coming in... it would be a lovely side dish.

You could clean the silk off the corn, put it back in the hush, roll each in aluminum foil and throw them in the fire that is cooking the pig. Fire, coals whatever you're doing. I soak the corn in water with sugar added for an hour or so before hand.

Or, you could go hillbilly and switch out corn liquor for the corn on the cob.

I haven't been hanging around here THAT long....

Thanks for the great idea! Never cooked corn that way but hey, I'm game.

Wait a minute. Not so sure saying I'm game in this thread is a healthy thing. <lol> Don't shoot!

I only shoot with a camera. You're somewhat safe.

Friend of mine is like that. He'd deck out in all his "flage" put <ew> doe in heat on himself, and position himself in a deer stand and simply shoot photos.

Great shots. Left the tummy rumbly but not everyone aims to kill.

Used to be plenty of deer in New England. Shouldn't need that smelly stuff. Plenty out here to shoot, too.

May be a fetish. I remember there being some law back then that if a deer got in your garden, you could kill and eat it. All my CT neighbors had gardens just to attract deer.

Well, that has either changed or, I'm just not aware of that being a law.

I have a garden but the last thing I want eating there are deer!

I agree that you just can't have BBQ without the standards. Me? Cole slaw, cornbread, baked beans, potato salad and corn of some form. I like it out of the fire.

But to offer you a couple of alternatives.

Olive oil based pasta salad (penne or some sort of short pasta). Add some garlic, fresh basil, oregeno, tomato, carrots, cabbage, corn, garbanzo beans, white beans, onion, scallions, peppers......whatever, and even some capers and I'm being serious.

Rice Pilaf or CousCous prepared with olive oil instead of butter. Add whatever sounds good to you that you didn't add to the pasta salad.

Bread? I would still do cornbread but, a French Baguette or Italian Ciabatta will suffice.

Again, I'll stick with the standards, but again, it ain't my pig.

Cole Slaw, I really don't like it. I'm going to pass on that.

Cornbread. Hmmmm.... that I can do.

Baked beans... on the menu. Old family recipe. Okay, it was from my husbands aunt. Don't call her old. :)

Potato salad? Ahhh... worried about the mayo and staying out in the heat.

Corn... yep, got that covered. It's just come into season here, almost 2 weeks early because of our warmer than normal weather.

Man.. thinking... you guys like your starches, huh?

Okay, the pasta salad, got that covered. Fresh cheese tortellini. Cherry tomatoes. Well, that's as far as I've gotten.... but no doubt olive oil, basil & garlic will come into play.

Now, for the "adult" beverages. Beer. Wine, red because I like it, and.... frozen margaritas. Because I like tequila.

If you are set on potato salad, this holds up well in the summer.

yellow finn potatoes
red onion
green onion
celery hearts
olives or not
toasted fennel seed
salt/pepper
parsley

Dressing:
roasted garlic puree
red wine vinegar
sherry vinegar
e/v olive oil

That sounds tasty, even at 6:00 a.m.!

I think I'm close to having the menu set, though thinking of adding:

tossed salad and/or this cold green bean salad that is nothing more than barely cooked green beans, dressed with an olive oil/garlic/salt/pepper dressing. I'm feeling a little "carbo loaded" with all the carbs on the menu....

My son didn't want a graduation cake for dessert, he actually wanted a pie. No, he's not getting that, but I thought maybe a tray of cookies would be good. The party will be mostly teenagers and it's something they can grab and run.

We have volleyball, croquet, and bocce for them to play, along with squirt guns to harass people with. When my eldest son graduated we had silly string. I will NOT do that again................

There are still crop and property damage tags up the ass. I take 4 a year and could get a dozen easy if i had the space and the urge to eat venison every da.y
