If you are set on potato salad, this holds up well in the summer.

yellow finn potatoes
red onion
green onion
celery hearts
olives or not
toasted fennel seed
salt/pepper
parsley

Dressing:
roasted garlic puree
red wine vinegar
sherry vinegar
e/v olive oil

That sounds tasty, even at 6:00 a.m.!

I think I'm close to having the menu set, though thinking of adding:

tossed salad and/or this cold green bean salad that is nothing more than barely cooked green beans, dressed with an olive oil/garlic/salt/pepper dressing. I'm feeling a little "carbo loaded" with all the carbs on the menu....

My son didn't want a graduation cake for dessert, he actually wanted a pie. No, he's not getting that, but I thought maybe a tray of cookies would be good. The party will be mostly teenagers and it's something they can grab and run.

We have volleyball, croquet, and bocce for them to play, along with squirt guns to harass people with. When my eldest son graduated we had silly string. I will NOT do that again................
What kind of gestapo mother are you? :mad: All of us guys that like pie over cake any day are seriously offended.

Too bad you don't have Marie Callender's restaurants in the area. You could just swing by and pick up a dozen of the most delicious pies ever.

Only Marie Callender's I know of comes from the freezer aisle of the supermarket.

I would bet that it's good, too. I think the restaurants are only in western states. Very good home style food. Each restaurant that I've been to has a full bakery attached. Great baked goods, pies, cakes, etc.

Caramel pies? What in the world is that? And my teeth hurt just thinking about it............

too late for that, but I am interested. Caramel? Pie?? This does not compute..........

Eagle Brand Condensed Milk. (The small cans make 1)
Boil in water 4 hours
Cool overnite
Open both ends
Push caramel into a graham cracker pie crust
Smooth with a wet spatula
Cover with whipped Cream
Sprinkle with toasted pecan pieces and mini chocolate chips

After the "boil", if you have everything prep'd and "hand ready", you (I) can make 24 in 30 minutes.

Yep! BOOM. Keep the can(s) completely covered in water and you'll have no problems. It's worth trying. Good stuff.

No before photos... sorry. It was much to early in the morning to focus my eyes, never mind a camera.

I know people took pics of the glorious finished product. Skin smoked/roasted to dark-golden deliciousness.

I made 3 sauces to go with. A North Carolina vinegar based sauce, a tomato based Memphis, and HOT/Sweet one that I cannot credit. Very little tomato, lots-o-hot.

I was too beat to eat. And right now there is nothing I'd rather do than crawl into my bed, pull up the covers and sleep for a solid 10 hours. UNFORTUNATELY, I still have a backyard of youts. And a hubby who is snoring in the lazyboy.

Snoring guy is the one who said to me yesterday....

"What are you stressing about, everything will get finished for the party."

Oh, sure. The magic party fairy will pop in and take care of it all.
