My luck is about to run out because I’ve already used FSU, Virginia, Kentucky, Florida, I’m prolly going UNC next and that just leaves me with Tennessee, A&M and NCST...

Technically you are still alive. You only have to pick 1 for the championship series and the two best teams still available. You would have to hope for a NC State win at some point though. I think NC State has a good chance of upsetting Kentucky. That may be your best bet for Day 1. They did blast Georgia in Game 1 of their Super Regional.
