4 star doesnt mean much. There is one player, maybe two on UTs roster that Bama had a commitible offer on.
I wouldn't focus too much on just Alabama. They do attract so many 5-star guys that they honestly do have to pick and choose the ones they want in some cases; you are right about that.
Look at a kid like Kongbo. In addition to an offer from Alabama, he had offers from FSU, USC, Auburn, Florida, Ohio St, and Oklahoma, among others.
In addition to an offer from Alabama, McKenzie had offers from Florida, Miami, Notre Dame, Ohio St, Oklahoma, Texas, USC, and Wisconsin, among others.
Tuttle: In addition to Alabama, he had offers from Clemson, FSU, Georgia, Miami, Michigan, Notre Dame, Ohio St, Texas, and LSU, among others.
Maybe Alabama didn't want all 3 per se (even though they offered all 3), but there were absolutely committable offers from a whole host of those other schools. It pains me to say this, but I'm really confident if Kongbo or McKenzie (maybe not Tuttle, since he's been injury-plagued) went to, say, FSU, Georgia, Miami, Ohio St, etc., they would have developed into nasty defensive linemen.
It is not an exaggeration to say that every big program in the country wanted them. Were all the schools that offered them and all the recruiting services just wrong about their talent level (i.e., Butch was just really unlucky and ended up with all the overrated ones)? Or did Butch's staff not adequately develop them and put them in positions to showcase their talent? My bet is firmly on the latter.
