When I used to do a ketosis diet (cut out carbs cyclically) I would go to Wendy's to break the diet and I would eat 4 JBCs, fries, nuggets, and a shake...every Friday after the gym. I miss that. It was euphoria.

I am a macronutrient counter. If it fits your macros (IIFYM). It's based off of protien, fat, and carb intake along with your goals. Cut, bulk, or maintain.
My wife and I did the Atkins in college. I remember seeing her one day and she was crying because she was so miserable. We went to Sam & Andy's. Turkey and smoked cheddar on dark with pickle and peppers did the trick. That diet isn't healthyIs that similar to the Atkins diet? Damn, the lack of energy...
I don't really focus on getting a certain intake mix. I found it's easiest to just track what you eat (watching is lazy - I keep a spreadsheet and it makes me so much more mindful) and the rest takes care of itself. You find good substitutions (like using 60 calorie bread slices instead of 120 calorie BSs to make a sandwich).
And the key to making it easy is you just have to break a few bad habits and you can transform yourself. For me, I had to make sure there is no cold cereal, soda, chips, or cookies in my house. That's it. I can basically have whatever else in my house and I will eat in reasonable moderation (and then I eat all that stuff on the weekends). I still have a few bad habits. I always have beer in the fridge, but I'm still down 20 lbs from where I started 2 years ago.
