Stay away from 100 level classes like philosophy, geography etc. they may seem easy, but its an awful lot of work, espicially if you're taking a full load. However, most 100 level classes are a joke if you take them in Summer session. History of Rock, Golf, Film Studies, and any Communication class taught by Dr. Ambler are all superb choices for GPA boosters... You could always take a half load of classes one semester, provided you get As, that will be a huge boost to your GPA.

Pre-med Biochemistry was a breeze. Just kidding.

Have you taken intro Psychology? Easy (if you can read or study, at all..) and interesting. Sociology, Death, Dying and Bereavement, and Ecology were also easier classes I enjoyed. Of course, most any "recreational" class shouldn't be too tough, but they aren't many hours, either (so less of a boost).

Film Studies,

just make sure you pick the right one. I took 'History of Vietnam through film' in mini-term once and it was brutal (of course that was a while ago). Watching movies was great but the papers were crazy.

I would recommend Medieval Studies but I heard they got rid of the professor soon after I finished it. Never changed his test for about 15yrs

Easiest classes I took at UT were Psych 110, Health 110 (Pretty sure that both Hefney and Dan Williams got A's and they were never there) and History of Rock with Wendell Werner (regarded by many students as the greatest class ever offered).

Geology 103, although it had a lab, was one of the easiest classes I've ever had. Just make sure to get it with Prof McKinney I think it is. You don't have to go to class except for the review session bc he tells you straight up exactly what's on the test.
