A Spanish style fried egg is fried sunny side up in a puddle of olive oil until the edges of the albumen are crispy and the yolk is almost like a soft boiled egg. Today, I made a bacon, egg, and cheese sandwich on toasted multigrain bread with two Spanish style fried eggs.
I get it. I will smoke at least three at a time and take off all but one of them a little early to package and freeze them. When I thaw and reheat them, they’re fine eating.
