My wife felt like cooking again (THANKFUL). Supper tonight was Kale and Mustard greens cooked with a big ham hock, two full racks of ribs, and homemade corn muffins.
The ribs came from Kroger, and they had more fat on them than the ones from Sam's Club or Publix. They were delicious, though, but probably we will stick to Publix/Sam's in the future for ribs. She cooked the ribs about five hours in the oven. The dry rub was salt, pepper, and brown sugar, and with about an hour of cook time remaining she added the sauce (Sonny's).
Gud eats, and it'll be good sleeps. hahaha
BTW, If anybody's in the market for a cast iron Dutch Oven, this is the one we got a while back. It's really nice to have for soup, chili, jambalaya, and (today) greens. It's a heavy and pricey sumbeech, but my wife wanted one of good quality. She says she's gonna cook jambalaya this weekend for the game. I hope so.
Of course, the key with anything cast iron is to run it through the dishwasher on full cycle a dozen or so times as part of the curing process. Yer welcome. ha
