I remove the skin when I cook it on a plank, that lets the steam from the plank penetrate the fish better. But it probably saved yours this time. Lol.

Looked like a nice plank, was it made for cooking or one you just made yourself?

Why were you visiting another church? Did you like it? Just curious because just today I was thinking about going to another church just for a change. I'm not looking to change, I love mine, but thought it would be cool for something different.

My brother sent me a video of his church. It's a big "modern" one, for lack of a better word. I mean it's got big screen TV's, a balcony, a string section a huge stage etc. Looked like a big mega church. Said they have about 600 every Sunday. I have zero interest in that type of church.

I jus enjoy visiting other places from time to time. I have several friends who pastor, and will occasionally go by myself to hear them . There are times we all go somewhere together, like tonight.

I'll add, I like the smaller church/closeness over the bigger church. We have a megachurch in Gainesville that's really popular, Jentzen Franklin is the pastor. I've went to hear him before, really like him, but don't tell my Baptist friends 🤣. I've also went there to hear TD Jake's, and John Hagee.

I just get a "fakeness" feel from those big ones like that. I know I should feel that way, but I do.
 
I know what you mean, it's definitely different from what I'm used to.
Yeah and after saying that I guess I should just be thankful that he's taking my niece to church. Not my place to judge, especially something I know nothing about.

Yup. That’s what I should have done this time
Alton Brown could explain why better than I can, he's the Rocket Scientist of the Celebrity Chefs. But they say to use about a tablespoon of salt to a gallon of your liquid that you're soaking it in. It will help release the steam slower and ultimately give it a better flavor. When I've done that, I've never burned the plank. Is that the reason I've never burned the plank? I can't say. But you can do what you want with this information.

One thing I can say for sure. I've never tried cooking cedar planked Salmon with wood in a Pyro Tower at 1259°.
