Now I am bummed. I arrive in San Francisco tomorrow morning and a couple of my colleagues arrive around the same time. We were planning to go to one of my favorite places - Swan Oyster Depot - for amazing seafood, lots of good raw stuff. Then on to a great beer bar.

My boss just called and he wants us to head over to Berkeley when we get in. Dammit.

No. Obviously you can, but its not needed.

Use a dry Marsala preferably from Marsala. I add a little heavy cream in mine. Beef broth, butter, garlic, shallots, butter, Marsala, garlic, butter, and a little cream. Oh, and butter.

That sounds better, I’ve used sherry before in a meatball recipe I loved, can’t find it anymore, but made more sense to me.
