Would love an outdoor kitchen, but now that I only have a lanai, that would be difficult.
A buddy’s family get away house in the South Bay Area hills has a wood fired pizza oven, that is what I want.

I’ve seen sherry or brandy plus extra flavors as subs for Marsala, but never with Marsala. If that makes any sense.
I finally broke down and invested 6 bucks or so in the real thing. Don’t drink fortified wines, but I love what they do for flavor (turkey tetrazzini with sherry; love the nutty taste, and the alcohol cooks off)

@Behr or anyone else, does Chicken Marsala call for sherry to be added besides Marsala? Saw a recipe with it.
lose the shallots and its perfect -- doesnt it call for mushrooms though ?No. Obviously you can, but its not needed.
Use a dry Marsala preferably from Marsala. I add a little heavy cream in mine. Beef broth, butter, garlic, shallots, butter, Marsala, garlic, butter, and a little cream. Oh, and butter.
