You'll also need to search for early explorers of Tejas like Fransico Vasquez de Cornado and Alvar Nunez Cabeza de Vaca. The pirate Jean La Faitte is in that group as well and LaSalle was killed in nearby Navasota too.
Lots of rich historical stuff man. With 6 flags, comes a ton of history. No one real text encompasses it all. You kinda got pick and choose what period your interested in and dive into it. I can make suggestions if you'd like to narrow down your search.
Texas History is kinda my thing. My mom taught it and I damn near majored in it.
On a side note, you'll need to keep in mind you're talking about studying up on a country. Not a state. Ours is a unique history that is a helluva lot different than the colonies, but similar in a few aspects.
