Sorry, but.... not all longhorns are steers. Not sure where you got that notion.

Longhorn is a breed of cattle, replete with bulls, cows, heifers, and steers - like all other cattle breeds.

Sorry. Grew up on a farm and couldn't help myself. Also, it just occurred to me that perhaps he was referring to the fact that they only use steers as Bevo. That I couldn't address as I have no knowledge. But no, not "all longhorns are steers." Would make sense to use only steers as Bevo though as steers tend to be less aggressive, of course.
