Behr, got any tips for a good homemade pizza, including dough?

On the dough, my teacher would say "if he's lucky".


I bought a pre-made dough from publix Friday night that was good. I put it in the oven until it was about half done then let it cool. I rubbed it down with olive oil then turned it over. I put some pizza sauce, fresh garlic I sliced thin with a razor blade, then fresh mozzarella, chunks of pepperoni and hard salami, roasted red peppers from a jar, sliced black olives, sliced red onions, fresh sliced basil, fresh grated Parmesan cheese, sea salt and cracked black pepper and drizzled it with olive oil.

I put it on the smoker with hickory chips and let it smoke at about 250 degrees for around 45 minutes.

GTFO!!!!

Bare, I've used my smoker for pizza several times. Been cooking at 450 deg.
Does cooking at 250 for longer time produce a softer crust? Intensify the smoke flavor?

It was. I used just a few chips and it had a "brick oven" flavor. Sooo good.

First time I've cooked pizza on a smoker that wasn't frozen. I just wanted it to heat the meat, finish the dough and not get too crispy and melt the cheese.

Can I have some? Is it ok if I pick the olives off?

It was a small Lowes cheapy smoker. I put the charcoal and just a hand full of water soaked hickory chips on about half way through. Pizza was never over direct heat or smoke.
 
Next time I'm gonna try some artichoke and eggplant on one and sundried tomatoes and rapini on another, as well as a bunch of other crap.
 
If its boneless, I usually beat the hell out of it to flatten it some. Then I rub a little olive oil on it. Sprinkle a little Montreal chicken seasoning, salt, and pepper, and a little onion powder.
 
Tex, if you have the time for overnight you need to bring your chicken. Try it once and I promise you'll never do it any other way. Then season it however you want when you cook it.
