gimme something else cheap and easy with not too many yucky vegetables in it. Mostly meats and cheeses maybe? Maybe somethin with spinach in it.

I like to make alfredo with just butter, cream and parmesan. I've tried adding spinach, mostly just so it's a tiny bit healthier, but also i like spinach. Broccoli is the best in alfredo. Broccoli and crushed red pepper. When I add spinach, it makes the sauce green and kinda turns people off, so broccoli is easier. Thoughts?
 
I really am sorry. I thought about it several hours the night you posted it and got a headache. Not knowing your taste, budget and ingredient availability made it a tough task. Then I got busy and just forgot. Thanks for forgiving me. I'll do better next time!

Why are they Crappy?

Ground beef, pork,veal, olive oil, fresh garlic, fresh tomatoes, fresh mozzarella, fresh Parmesan, fresh rosemary, fresh basil, burgundy wine, bay leaf, cracked black pepper, onion, roasted red peppers and A Lot of Love.

Behr, there is a place for sale right next door to me. Come be my neighbor and bring the sauce with you.:birgits_giggle:

Use Fresh Spinach.

Saute it in a little olive oil and garlic first. Drain the oil out as best as you can and add it to the sauce last. Stir it just a couple of times, or not at all. Add it to the plated dish.

I always add a little garlic to my Alfredo anyway.

Do you know how to make a nice Burre Blanc?

Do you have an Asian Market close by or easily available?
 
Yeah. You have to, don't you? If I'm gonna make a sauce like that, I don't see the point in trying to substitute. Just like I don't make biscuits without buttermilk.
 
No you don't have to. The original recipe does not add cream. Cream has been added by many to make it easier, it helps keep it from separating.

I ask only because I want to share three ingredients with you to use in it to make something really different. The recipe I mentioned last night, but how you make the burre blanc will make a difference on when to add them.
 
Ah. I had a recipe that called or champagne, and I was going to make it New Year's Day cause I knew we wouldn't drink the whole bottle NYE. Well, I had the bottle on it's side in the fridge cause I forgot to move things around and make room. The stopper blew off sometime during the night. I had the biggest freaking mess!!
 
That had to suck! Just be glad it wasn't red wine.....yep, been there.

If you are interested, I'll give you my recipe for a nice burre blanc (probably close to the one you use, just without the cream), you just have to pay a little more attention to it. I'll also share a "twist" that is a culinary orgasm.
 
Simmer about a cup of white wine (any will work) with about an 1/8 cup of white wine vinegar and one small diced shallot. Let it simmer for a couple of minutes (until it starts to reduce).

Whisk in about a half of stick of butter chopped in 4 pieces. When they are almost melted, whisk another half the same way. Do this until you have added 2 sticks of butter. (didn't say it was healthy) :)

Constantly whisk it.
