It works well with sweet potatoes or anything else prosciutto does. Cut some SP in to wedges lengthwise, toss in some olive oil and roast in the oven or grill.

Make a chimichurri (sp) and drizzle it over the SP and add some speck.

Curious, where did you get it?

It's Murray Cheese, imported from Italy (Parma). I was buying Prosciutto and my "cheese guy" showed it to me. Never been farther north than Rome, but we both love Italian food. I mean real Italian, like a good restaurant/home cooking in Italy 😋. So I wanted to give it a try.

I fried the prosciutto, added some fresh chopped garlic, took prosciutto out, added a diced red bell pepper to the skillet, then made a simple béchamel, added peas and fresh parmesan, poured that over angel hair nests, topped it with the prosciutto. Pretty good but wanted something different for the Speck.

My biggest concern is flooding. I've got a nice little treehouse about 15ft. Off the ground. Pretty sure I'll be good.


Seriously, thanks for your concern. Yes, I will be smart and I have been in preparation. However, no I won't be leaving. If it starts looking really bad for my area, I have a Designated Hurricane Shelter I will go to and will be on a Volunteer first responders team to help any way I can. Gotta represent the Volunteers in Gator country whenever possible. :)
