Growing up, folks grew butter beans, blackeyed peas, crowder peas (aka cow peas), white acre peas, cranberry beans. Every now and again, my kinfolk from coastal Georgia would buy Seminole peas from roadside stands. These you ate with cornbread or hoecake and chow chow. Pinto beans were not grown by local gardeners.
 
Tin Man, or anyone. Please tell me what osso bucco is, to your understanding. This is not a trick question, there really isn't a wrong answer, unless you think it's a truck.
 
Yesterday evening, I cooked baby back ribs just the way my wife requested. I started with 4 whole slabs (~2 ft long) which I cut in half for marinating and ease of cooking. Per the missus request, these spent Saturday night in mojo creole sauce. Sunday evening, they were put on the grill (indirect heat). The smoke box was filled with hickory "biscuits." [I cut these from hickory tree branch fall.] The temp in the covered grill was ~300f. About 90 minutes after starting them, I glazed two of the pieces with Stubs Original BBQ sauce (per request). Served those up and saved the others. Yeah, I know this is unorthodox, and true smokers of beast flesh will be aghast. I'm married. She was more than happy. The ribs were tasty.
 
Osso buco is Milanese braised veal shanks with veggies. I'm not sure if the spelling is significant, but "osso buco" recipes are for veal. "Osso Bucco" recipes are beef (other than baby cow).
 
I thought it was ox tails for the longest time, but learned 4 or 5 years ago its the lower leg of cow. Thats why the meat to bone ratio is so low. The marrow makes the dish tho.

I guess I can see how someone might think the above is an Osso Bucco. It sort of looks like the shank portion of a truck...
 
Ate an onion bagel with cream cheese and sliced tomato on it. Tasty.

Kev posted a gif last week that added lox, which is cured salmon, smoked salmon works really well too. I would think the salmon prepared either way would be really good for you.
 
Bought the ingredients for the chow chow yesterday, got everything but the pickling spice. SOB! It was on my list too.

Got the veggies at the Farmers market, including some cayenne peppers. Gonna stop by Publix after Church and get the spice. Will start the soaking tonight or tomorrow night. Hopefully Tuesday I'll have a report on this coveted condiment.

I got sidetracked and I'm sure no one is interested in details.

Last night I finalized the recipe, ingredients and conversions.

I will be soaking the veggies tonight and will know tomorrow. In my defense, I did say "hopefully" Tuesday.:)

I know it seems I've made this more difficult than it should be, but that's the way I like it. I haven't posted much about it the last couple of days just to spare everyone.

If you thought Id forgotten or decided against doing it, you're not even close. Haha.

Another question I've been meaning to ask. Several weeks ago in the What did you have for dinner thread, Tin Man commented that you and your wife eat better than most. My question is, does your wife actually make herself a plate and sit down eat it? This might seem like a silly question, but it's not.

oregano. it was awesome!! yes, she does eat the same thing. we are usually cooking together and eat together. having two of the same plate offers better opportunity for her to get a decent picture. haha! and, you won't be surprised that she forgot the garnish again (oregano and lemon zest). lulz!!

More often than not, I end up "tasting" so much that I don't actually make myself a plate and sit down and eat.

Oh well, at least she remembers before you eat it, which is obviously more important.

How's she feeling these days?

If I was putting a number on it I'd say 60% most days. With an occasional horrible day and an occasional good one. We try to really focus on the good ones. You can tell from the smile this thing is a long way from beating her.
She's a good one.
